There's often two types of categories for people when it comes to discovering new restaurants. Some want to shout from the rooftops and let anyone and everyone know about that place. Others want to keep the delicious food a secret for as long as they possibly can, to enjoy it as often as possible.

The second type is likely the case for the only Maine restaurant to make the NY Times list for "50 Best Restaurants of 2023". It's a restaurant that is a road trip for most, but man does it serve up some really delicious food.

It's called Tinder Hearth, and no, it's not a dating service. Located in Brooksville (a town of less than 1,000 people), the farmhouse/bakery/pizza place is now a destination restaurant that has turned a supply and demand concept into an absolute home run.

At its core, it's just a great pizza joint. Tinder Hearth is only open four nights per week, keeping the staff fresh and energetic. Not only that, but Tinder Hearth puts a cap on how many pizzas they make each and every night. 150, that's it. If there's more demand, you'll have to come back another night.

That supply and demand concept makes Tinder Hearth feel incredibly exclusive. The restaurant also surprises guests with their toppings ranging from standard pizza fare to the luxurious and unique. There's also ice cream available for dessert.

Tinder Hearth also features an on-site bakery that houses plenty of scrumptious homemade baked goods if you're more of a morning person.
