When I found out that Mainers gather and cook the curled ends of fiddlehead ferns, I was floored.

I've never had them before (because the rest of the country doesn't eat them) and I was very curious after hearing mixed reviews. One of my friends insisted I refrain from trying them until she could prepare some for me, so I patiently waited until this weekend, when our schedules finally met up.

The results are in: they're amazing.
