There's some great news this school year for vegetarian and vegan students in the Portland school district.

According to vegnews.com, some Portland schools are now offering more and better vegetarian and vegan options to students for school lunch. Not only will students be able to have menu options such as pasta and vegetarian bean chili, but the district is considering adding even more choices as well.

Mediterranean hummus pizza, Kung Pao tofu, vegan burgers, lentil Sloppy Joes, and carrot hot dogs could soon show up as options as well.

The change comes after two students wrote to the food service director asking for more vegetarian options in Portland schools.

I think this is great news. My daughters, who are in fifth and sixth grade, are vegetarian and vegan. I know firsthand how challenging it can be to keep them healthy, while giving them a good variety of food.

Hopefully more school districts in Maine will follow Portland's lead.
