With an arctic blast hitting us this week I decided to cook up a meal that will warm you up inside and out.

This week's dish looks like the prep time is long but I assure you, it's not. I call it Steelzy's Sausage Medley.

Here's what you'll need.

The recipe calls for 6 sausage links, either hot or sweet. I prefer 3 (or 4) of each.

1 green pepper

1 red pepper

1 yellow pepper

1 orange pepper

1 red onion

1 sweet potato

4 red roasting potatoes

2-3 tablespoons of olive oil

garlic pepper to taste.

Here's how it's done;

(Pro tip) stick the sausage in the freezer for about 20 minutes, this will keep the sausages from falling apart while you're cutting them. It also makes the sausages much easier to cut!

Preheat oven to 450 degrees.

Cut the peppers, potatoes, and onion into bite size chunks and place them in a large bowl. Add the olive oil and mix well making sure to coat all the veggies. You can add more oil if you'd like. Sprinkle on the garlic pepper until it covers everything. Next cut up the sausages and add them to the mix.

Spray 9x13 baking dish with cooking spray and transfer ingredients.

Bake at 450 for 35-40 minutes UNCOVERED, then cover with aluminum foil for another 10 minutes.

Remove from oven and let sit for 5 minutes before serving and enjoy!

One of my favorite things about this dish is the fact that it's just as good re-heated the next day or so!
