Over the past 15 years or so, Portland, Maine, and its culinary scene have found themselves in the spotlight over and over again.

Cong Tu Bot is a hip yet casual restaurant that serves up Vietnamese-inspired comfort food. Initially, Cong Tu Bot started with a small, simple menu that has been transformed over the years to include some wonderfully complex dishes.

Resy highlighted that complexity in a pair of dishes they loved while heaping praise on the restaurant for this 'retro' website and the fact that they save half their dining room for walk-in customers, even on busy nights.

It Hasn't Been an Easy Go For Cong Tu Bot in Portland, Maine

Cong Tu Bot's inclusion on the Resy Top 100 list isn't the first time the restaurant has been lauded. In 2021, the New York Times named the restaurant among the 50 best in the country.

But in 2023, the owners had to file bankruptcy and readjust their plan. While that adjustment has been reflected in menu prices, the service and quality of food at Cong Tu Bot in amongst the best you'll find anywhere in the city.
