Every year at Thanksgiving I go to my mothers and enjoy the company and chats, and of course the food. When I was younger and the family was bigger we would do the traditional turkey with all the fixings. Since the family has gotten smaller over the years my mom has decided to stop cooking a turkey and has switched to an oven stuffer roaster chicken which, personally, I prefer over turkey so that's a win.

She makes a big ol mound of stuffing, delicious mashed potatoes, fresh cranberry sauce and one of my favorites side dishes ever. Ambrosia salad. If you're not familiar with ambrosia salad it's a fruit salad with pineapples, mandarin orange slices, maraschino cherries, mini marshmallows, some shredded coconut and some type of dairy. My mom uses sour cream, but it can be made with cottage cheese, whipped cream or yogurt. It's sweet, tangy and tart and I absolutely love it.

Whenever I bring up the dish people look at me like I have two heads. A lot of people never heard of ambrosia salad before. To those people I say give it a try this Thanksgiving, or anytime really. It's not much to look at but it sure is delicious.
